Blender Banana Loaf

 

Well, after three attempts to perfect this loaf, here it is. In all it's beautifully delicious glory.

 

You may have seen how incredibly easy to throw together this is if you follow us on Instagram (hint, hint). Basically, it's a throw everything in a blender and whiz til smooth, bang it in the oven and there you have it kinda deal. Made with gluten free flours and natural sugar this is an amazing healthy treat. We hope you enjoy it as much as we do.

 

 

Ingredients:

 

1 banana

3/4 cup of dried dates

1 cup tapioca flour

1/2 cup coconut flour

1.5 tsp baking flour

1/2 cup of shredded coconut

1/2 cup water

2 Tbsp extra virgin olive oil (light in flavour or use melted coconut oil)

2 eggs

1/4 cup brown rice syrup

 

Directions:

 

Preheat oven to 160 degrees celsius. Throw it all in a blender and blend until smooth. Top with 2 Tbsp chocolate chips or sprinkle with flaked or shredded coconut (optional).

Bake until golden brown and a knife comes out clean when inserted. For me that was 45 minutes.

 

This is prefect for the kids lunch boxes or a yummy sweet treat with a cuppa.
