It's one of those days today. You know, the wintery, rainy days when your stuck inside? I thought I would be clever this morning and save time and stress tonight by popping the crockpot on with tonight's dinner.
The thing with crockpot cooking though, is that you can smell yumminess - all. day. long. So I feel like I have been hungry most of the day. Of course being that I eat intuitively, I eat when I'm hungry. Which of course is fine if you have nutritious things to snack on, right?
With the afternoon fast approaching, I wanted something warm and delicious for the kid's to come home to after school. With my fruit bowl over-flowing with bananas, I knew what my star ingredient had to be.
So here we have it, Banana pancakes that just so happen to be gluten free, dairy free and refined sugar free. The kids loved them, and so did I. I hope you give them a go, and love them as much as we did.
Paleo Banana Pancakes:
3/4c Almond Butter (Homemade is cheaper and easy peasy)
A few shakes of cinnamon
Pop all ingredients in the blender and blend until smooth. Cook in a pan on medium heat. If you need to use oil, I recommend using coconut oil as it can be heated to higher temperatures without turning toxic like many other cooking oils.
*Please note, these are much easier to flip if you make them small in size like pikelets.
