Healthy Breakfast Cookies


Struggling to get a nutritious balanced breakfast in before you rush off for the day? Have we got a treat for you!

Picture this - Amazing bowl of oats topped with chia, cranberries, pumpkin seeds, cinnamon and a drizzle of maple syrup. Now imagine this in cookie form! These cookies are packed full of good fats, fibre, protein and carbs to give you energy and keep you going on those busy mornings. I'll be popping one in the kids lunchboxes too!

Healthy Breakfast Cookies

1/4c coconut oil
1/2c dates
1/4c water
2 Tbsp pure maple syrup
1 tsp vanilla extract
1 large egg
1c spelt flour
2c oats
1/2c pumpkin seeds
1/2c dried cranberries
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4c chia seeds

Pre-heat oven to 180 degrees celsius. Heat dates in a small saucepan with 1/4c water until mushy (you may need to add a tad more water if it dries out), let cool. Add coconut oil, maple syrup, vanilla and egg to a medium sized bowl and mix. To another bowl mix the flour, oats, pumpkin seeds, cranberries, baking soda, salt, cinnamon and seeds with a whisk. Add dates and dry ingredients to the wet ingredients and mix thoroughly. Place spoonfuls of the mixture on a lined baking tray and pop in the oven for 15 minutes. Place on a cooling rack to cool down.
